Lion’s Mane Mushroom Slider Recipe
Ingredients
4 PQB manchego polenta pull apart rolls
2T mushroom butter
1 Lion’s Mane mushroom
4T crispy shallots
2T chili crisp
as needed- canola oil
to taste - salt & pepper
Method
Preheat an oven to 375. Slice the rolls open in half like a hamburger bun. Toast in the oven for 7-10 minutes or until it starts to get golden. Cut the mushroom into half inch slices. Score the mushrooms in a cross-hatch pattern on the flat side. Preheat a skillet over high heat. Add oil to coat the bottom of the pan. Season then sear the mushrooms on both sides until deep golden and cooked through. Cut into squares that will fit on the bun. When ready to assemble, spread the butter on both sides of the bun, then place a slice of mushroom, top with a spoon of chili crisp & crispy shallots. Serve warm.
